Hervé Leferrer
Guardian of Terroir
From the 1980s to the early 1990s, Hervé Leferrer served as General Manager of Domaine de la Romanée-Conti, overseeing vineyard strategy and cellar craftsmanship during the estate’s rise as a world benchmark, and safeguarding its terroir-driven philosophy.
Though he left Burgundy in 1996, its viticultural philosophy remained central to his work. On mineral rich hillsides, he rebuilt vineyards following biodynamic principles, applying Burgundian rigor andhumility from soil preparation to harvest
Since joining Château de la Nauve as winemaking consultant in 2022, Hervé Leferrer has broughtRomanée-Conti-inspired precision—micro-parcel management, strict selection, gentle extraction, and refined élevage—shaping the estate with international standards and deep respect for terroir.
Sebastien Xans
Cellar Manager
Deeply rooted in Saint-Émilion traditions, Sébastien Xans oversees vineyard management with meticulous pruning and precise parcel supervision, closely monitoring soils and vine balance to ensure clear and authentic terroir expression
Grapes are hand-harvested at optimal maturity and rigorously selected under his direct supervision, with only fruit meeting the estate’s strict standards entering the cellar, preserving purity and aromatic precision.
From fermentation to extraction, Sébastien personally controls every stage of vinification, adapting techniques parcel by parcel. Barrel ageing is carefully monitored to refine structure, balance, andelegance while respecting the character of the vineyard.
